Why Scaling Isn't Just Multiplying

Leavening Agents (Baking Powder, Soda, Yeast)

Above 2×, leavening should be reduced to ~75% of the calculated amount. Too much leavening causes cakes to rise too fast then collapse. This calculator adjusts automatically.

Eggs

You can't use 2.5 eggs. This calculator shows gram equivalents (1 egg ≈ 50g) so you can weigh instead of counting.

Extreme Scaling (above 4×)

Beyond 4×, consider splitting into multiple batches. Bake times, temperatures, and chemical reactions don't scale linearly at extreme ratios.
