Cookie Pricing Guide — Per-Unit Costing & Gift Pricing

A batch of 48 cookies costs $6-12 in ingredients. Decorated sugar cookies sell for $3-8 each. The gap between those numbers is where your business lives.

The Formula

Batch Ingredient Cost ÷ Yield + (Decoration Time × Hourly Rate ÷ Cookies Per Hour) = Cost Per Cookie

Cookie pricing has two tiers: plain (high-volume, low-margin) and decorated (lower-volume, high-margin). Decoration time is the major cost driver. A skilled decorator does 10-15 cookies/hour; a beginner does 5-8.

Example:

Decorated sugar cookies: $10 ingredients (batch of 36) + $60 decoration labour (4hrs at $15/cookie-hr) + $7 packaging = $77. Cost per cookie: $2.14. At 55% margin: $4.75 each.

Fix: Have separate pricing tiers: plain, simple decoration, complex decoration.

Not setting minimums for custom orders

Setting up royal icing colors and templates for 6 cookies takes the same time as for 24.

Fix: Minimum order: 12 for custom decorated, 24 for plain. Or add a small-order fee.

Free gift packaging

A nice box, ribbon, and tissue costs $2-5. On a $25 gift box, that's 8-20% of revenue.
